2017 TOST - Hands on making Jade Oolong in Alishan


Another busy day for #2017TOST to study in Alishan, from 7am to the second day 1:00am...
Thanks to our host Mr. and Mrs. Wang of Wang Ting Tea Farm.  They offer such a facility for us to stay focused on learning without interference.  We are able to visit the tea garden to study the plantation management, we also have a good factory that we can experience from the fresh leaf, outdoor withering, indoor withering, tumbling, oxidation, fixation, primary rolling, drying...canvas wrap rolling, baking...  Along each processing stage, tea needs time to work, and we don't take break, either. TOST do have many programs, such as: cultivar studies, tea chemistry, focused cuppings, terroirs studies...  (Thanks to our technical instructor, Master Steve Huang.)

We enjoy group learning, as everyone has his/her angle to see things, group learning can indeed enhance the discussion and knowledge sharing... We also believe in Hands On study, to be there with leaf from the beginning to the end... to see, to smell, to experience and to cup... understanding with personal touch is so important. Step by step, from the garden to the table...deal with the leaf and have a full dialogue with leaf and listen to the conversation among tea farmers and tea specialists... Your notes and your photos are making more sense this way...

I like to share one Youtube video ( https://youtu.be/WzP5kakvp0M ) recorded back on 2016 TOST Closing ceremony.  Our hearty appreciation to all our members from each year, also to all these volunteers, farmers and their family, and to tea specialists from different fields.  We are lucky to have visionary advisers,  Professor Lynn Lin, Steve Huang, Ambassador Rex Wang... with their encouragements and strong supports for us to carry on this TOST program.  We know very well, together we will change Taiwan tea for a bright and positive future.
